Day 21: OXO Tot Sprout High Chair
Because I just recently wrote a detailed blog post about the OXO Sprout High Chair, I decided that I would share a recipe from my friends at OXO. At the Drool Baby Expo in May, they did a great seminar on cooking for kids. They had several tasty ideas, but this one stood out to me for its simplicity and sophistication.
Sweet Pea and Ricotta Mint Mash
2 tablespoons olive oil
2 cups yellow onion, thinly sliced
3 cups sweet peas, blanched and refreshed under cold water
2 tablespoons mint leaves
2 tablespoons ricotta cheese (or to taste)
Heat the olive oil in a small sauté pan over a medium flame and add the onions. Sauté until the onions begin to brown slightly, about 5 minutes, and reduce the heat to low. Continue cooking the onions until caramelized‐ deeply browned and very sweet‐ about 20 minutes more. Season with salt and pepper and set aside.
Toss the blanched peas with the mint, and mash them with a Baby Food Masher. If your baby is eating cheese, try mixing spoonfuls of ricotta into the mash in order to introduce a new smoother flavor to your Tots.
For older kids and adults, OXO says this recipe also produces a lovely bruschetta. Simply slice a baguette, brush it with olive oil and toast or grill it. Then rub a clove of garlic over the bread. Spread with ricotta cheese and spoon some crushed peas and carmelized onions on top.
